Tomato, the beating heart of Italian cuisine, must be the common thread that unites past, present, and future in the 170th anniversary of CIRIO's foundation. The dish must be a first course inspired by a classic recipe of Italian cuisine with the theme "Tradition and innovation: Cirio Alta Cucina tomato in Italian regional cuisine between past and future". The dish will be a symbol of regional roots and Italian gastronomic heritage, but with a touch of innovation that reinterprets it with a contemporary vision, through modern techniques, aesthetic creativity, and attention to sustainability.
