ITALIAN CUISINE CHAMPIONSHIPS

FIC Arena - Hall B3

The Italian Cuisine Championships are the most important event in terms of national culinary competitions and are organized by the Federazione Italiana Cuochi. Now in their 10th edition, they will take place in the FIC Arena (hall B3).

This is a highly anticipated event with an international focus that has received important recognition from Worldchefs, the global chefs' organization of which FIC is a member and one of the most active associations. Many new features and contests are planned for 2026, representing an extraordinary showcase for global gastronomy.

The competitions scheduled for this day are:

  • Team Hot Kitchen: in dedicated laboratories, five Regional and/or Provincial Teams will each prepare 40 competition menus, showcasing the excellence of their territories and serving them in the Italian Taste Restaurant.

  • Individual Hot Kitchen (K1): each participant presents a Main Course using Prodemar turbot fillet as the main component of the dish.

  • "Special Kids" Contest: on stage, hot kitchen with teams composed of two students assisted by a tutor. A growth experience supported by the FIC Solidarity and Emergencies Department.

  • "Best Professional Lady Chef" Contest: tomato becomes the common thread for a first course inspired by Italian cuisine, celebrating CIRIO's 170th anniversary through the theme "Tradition and innovation".

  • "Best Hotel Institute Student" Trophy: national final reserved for third, fourth, and fifth-year students, with the theme of using Icelandic cod in a "Starter".

  • "Street Food" Contest: each team presents a street food preparation related to a local specialty or an iconic dish from their territory, with technical characteristics of professional catering.

  • Italian Selection Catering Up: within the team area boxes, the Italian selection for the world's most important catering and banqueting competition will take place. Its regulations include extremely challenging and exhausting tests, while offering the catering world insights into new paths and research in banqueting and the precious art of reception.
