Shifts, expectations, professional identity, personal and economic sustainability: working in bars and restaurants is no longer what it was ten years ago.
This talk starts from the perspective of the new generations to focus on what young people who choose the counter as a profession really ask for today: less rhetoric, more skills; less sacrifice for its own sake, more purpose; fewer automatic hierarchies, more shared responsibility.
A direct discussion on what still works, what is no longer acceptable, and what needs to be rethought if the sector wants to remain attractive.
