The talk addresses a central topic for the bar and hospitality world: what are the key challenges to growing and achieving success when working outside major cities?
The discussion starts from real-life experiences to understand which choices truly matter, what tools are effective, and what challenges emerge when operating in provincial contexts, often far from well-known circuits such as Milan and Rome.

On stage, three realities with different histories and models, yet united by a strong identity and daily work focused on quality and guest relationships.
Speakers include Niccolò Amadori, founder of Alto Cocktail Festival and head of Alto Cocktail Bar in Cervia; Emanuele Primavera of Cinquanta – Spirito Italiano, a project that has redefined the Italian-style bar in a contemporary way; and Rama Redzepi, bar manager at Grand Hotel Fasano, a benchmark for hotel mixology on Lake Garda.

The talk explores what it takes to build visibility, consistency, and credibility — but above all, the specific difficulties found in different territories and how to turn geographical limitations into a strength.
