Quality, Simplicity and Identity Lead a New Direction

Italian craft beer is undergoing a profound transformation. After years of endless beer lists and dozens of references added mainly to impress, today’s consumers are demanding clearer, more coherent selections that reflect the identity of each venue. These trends, highlighted by Ristorazione Italia Magazine, are strongly confirmed by the latest market research.

 

Consumers Want Clarity, Not Confusion

The era of 50-item beer lists is coming to an end. Today’s typical customer prefers a curated selection, featuring quick but well-managed rotations and offerings that align with the venue’s philosophy. Supporting this shift is a market that has reached a mature stage: in the first six months of 2025, 440 new craft beers were launched, marking a +27% growth compared to the previous year (Whatabeer data). It’s a sign of strong creative vitality, one that requires venues to make smart, meaningful choices.

 

A “Normalized” Craft Beer: Quality Without Complexity

Craft beer is no longer a niche product. It is moving toward normalization: served more naturally, without overly technical language or the exclusivity that once made it feel distant to part of the public.

This is why trained staff now play a crucial role. A streamlined beer list only works when supported by simple yet detailed explanations and great attention to serving temperature, glassware, and presentation.

 

 

The Value of a Strong Local Identity

The Italian beer supply chain is increasingly local. Across the country, roughly one in four breweries is agricultural, and recent research shows a strong preference for km-0 products and Italian ingredients, particularly among younger consumers.

For venues, this opens the door to building an authentic offering based on seasonality, local raw materials, collaborations with nearby breweries, and dedicated small-batch productions.

 

Low and No Alcohol: A Trend That’s Here to Stay

2025 confirms the rise of low and no-alcohol beers, now an integral part of the craft beer landscape.
In the first half of the year, 16.14% of all new Italian craft beers had an alcohol content below 4% (Whatabeer data)—a figure that reflects the growing shift toward lighter, more everyday, and more responsible drinking habits.

This trend is a significant opportunity for venues looking to broaden their audience, welcome consumers seeking moderate alternatives, and offer a beer suitable “for any occasion.”

 

 

Sustainability and Practicality Drive the Growth of Cans

Formats are evolving too. Cans continue to grow thanks to their higher sustainability—they contain up to 20 times more recycled material compared to glass and reduce environmental impact by 12–15% (source: Global Market Insights Inc.). They also offer better product preservation and simplify logistics, enabling faster rotations.

In 2025, the can format is at the center of collaborations between breweries and venues, limited-edition releases, and seasonal productions. A trend that fits perfectly with today’s leaner, more dynamic beer lists.
